I could think of a couple of options to access the VM's files:
- use a compatible host, attach the VMFS disk and install ESXi on an USB device
- use a Linux system with vmfs-tools (http://planetvm.net/blog/?p=1592)
- use a rescue boot CD like the one mentined at Re: Repair / Recover VMFS Volume
